Why Marinate Steak And Other Meats?

Have you ever wondered what the health benefits of marinating meats are? Besides tenderizing and flavoring the meats, marinating adds benefits in other ways as well. Oh, and yes, this family recipe for Marinated Steak has been passed down for generations! Here is a list of some of the benefits.

  • Marinating beef, fish, pork, and poultry lowers the number of HCAs by as much as 99% in meats cooked at high temperatures.
  • Marinades act like a barrier to protect the meat from the extreme heat in grilling or baking at high temperatures.
  • Marinating meats slow any bacterial growth.
  • Marinating meats makes them less tough, tastier, and juicier.
Whether you like it well done, rare, or medium-rare, marinating makes the steak!

How long should you marinate meat?

Marinades are usually applied anywhere from a half-hour to overnight before cooking to allow the flavors and juices to be absorbed in the meat.

It is safe to leave marinating meats at room temperature for a half-hour to an hour, depending on the type of meat. After that, it should be placed in the refrigerator. Fish should always be marinated in the refrigerator after application. Always cook the meat within a day of marinating it. Always wash your hands thoroughly after handling meat, especially chicken, to prevent salmonella poisoning. Chicken and pork should always be fully cooked before eating.

Marinating and then freezing meat can also be a time-saving method when preparing foods that you intend to cook later. I used this method for years when my children were growing up, and it was necessary to plan ahead so that I would be able to have meals ready in less time and still manage to work. This method also saved money. I would buy larger portions of meats at a butcher shop or outlet that sold larger family-sized quantities. I would then prepare the meats and marinate them. I made portions in the amounts needed for one meal, placed them in freezer bags, and froze them. In the morning or night before, I would take out one of these to thaw. The meat portion of the meal would then be ready to bake or cook as needed while I prepared the vegetable portion.

Easy Marinade for Steak

Ingredients

  • 2 – Sliced garlic cloves

  • 3 – Sundried Tomato pieces

  • 2 – Tablespoons of Montreal-style Steak Spice – If using unsalted, add a small amount of sea salt.

  • 3 or 4 drops of liquid smoke

  • Slices of peeled fresh ginger root

  • 1 Tablespoon Gluten Free Soy Sauce (not shown)

  • 1/4 cup Avocado Oil and Coconut Oil blend (or mix separate oils)

Directions

  • Assemble ingredients for the steak marinade. Alter amounts depending on the size of the meat portion. The amounts shown were for a family meal with some leftovers for the next day. Thinly sliced cold steak is delicious, also.
  • Place all ingredients on the steak, and with both hands, gently rub the marinade into the steak.
  • Cover and let the steak sit in the marinade for up to an hour at room temperature, turning once. Or place it in the refrigerator to marinate overnight.
  • Grill, bake, or pan-fry steak within 24 hours.
  • Make sure the grill or pan is heated before beginning to cook. Keep an eye on the steak to cook to your desired doneness.
  • Let steak rest for five minutes before serving.

Notes

  • I advise using either a blend or only avocado oil for the marinade.
