Kindle Book and e-book version.

In GLUTEN-FREE, YOU CAN DO IT! You will find complete Ingredient Charts for my 4 Original gluten-free FLOUR BLENDS and 3 BREAD MIXES. Each Mix or BLEND makes MULTIPLE RECIPES.

You can make delicious flaky Puff Pastry Twists like these.
Make ahead, freeze, and bake as desired.

This is an awesome gluten-free cookbook, packed with information, photographs, and formulas for all the make ahead baking mixes. It is a good read, practical, and full of fun with lots of anecdotal stories. If as well as following recipes, you enjoy reading cookbooks, like me, this one will not disappoint you.”

Trina

I have enjoyed this whole book-writing process. The PUFF PASTRY RECIPE alone is amazing! There are step-by-step photographs of how to make it. The process takes only a few minutes a day for about 4 days, and then you have Puff Pastry in your freezer to bake anytime. It tastes delicious and, once baked, can be re-warmed without going hard the next day! I love having Puff Pastry made ahead for special occasion meals.

Reviews

“Thank you, Trina. I love the options you give to make gluten-free flour. I love that you created a set for Nightshade Free. There are not too many cookbooks for this, and also gluten-free. I love that I can use your cookbook for baking without nightshades.” Ivey H., New Hampshire, USA

“It has now been several years since we first served gluten-free food, and I feel it’s our best product to date. Combined with top-quality ingredients and over 40 years of experience, we have revised our recipe to taste like our famous fish n’ chips! I am proud to be serving gluten-free battered fish & chips to the Durham Region.” Randy at Schooner Fish N’ Chips, Oshawa.
You can read the story at the link about how they came to use Trina’s Secret Batter recipe.

“It is so wonderful to make bread again – with your bread mixes, it is easy and delicious. I love that you can blend flours and then just bake with the one that works best in a particular recipe. I used to have only wheat flour, all-purpose, pastry, cake flour, and whole wheat to make everything. Thank you for making them with almost the same names …only gluten-free. I can use all your flour mixes for my old recipes because I know which one fits.  I make your seven original mixes once a month and just bake anything I want. I have a family of five to cook for and need to save time. We all eat gluten-free now. It tastes so good.”
M. Randall, British Columbia, Canada

“Trina’s cookbook has helped me so much! I have several dietary restrictions besides gluten. I met Trina some years ago and bought her mixes. They were easy to use, and I was lost when she could no longer sell them. So I am delighted with this new cookbook. My family and I can enjoy her great bread again!” Pamela J., Florida, USA

“Never in my wildest dreams would I have thought I could make Gluten-Free Puff Pastry. But now I can, thanks to your book! Honestly, I thought these would be hard recipes, but with all your pictures and instructions, once I followed them, it became manageable. I make something from your book every week and freeze it, so I’m never without something tasty and nutritious to eat. My other favorite recipes are Cloverleaf Dinner Rolls and Pizza. Just like my wheat days, I can have it all again.” Patricia L., California, USA

“I bought your hardcover cookbook first. I loved it a lot, but then I bought the ebook version because it is searchable, and I keep my iPad in the kitchen and can refer to your book whenever I need to. I like the step-by-step way you write the recipes. Plus, all the photographs in your book are beautiful.” Olive, A., North Carolina, USA

“Trina has single-handedly moved the needle on delicious and gluten-free being mentioned in the same sentence. Enjoy the book, and yes, the recipes taste better than any picture you see.”

I would love to get your book in paperback or hardcover form. I’ve downloaded it on my tablet, but it’s hard to keep going back to the tablet. The recipes are great.

I’ve tried the 7A bread recipe and it’s excellent. My first loaf I didn’t bake long enough so it fell.
    Thanks again great book.

Hi Diane, Thanks for your comments for sure. Baking gluten-free is always a learning experience. Glad you have had success with White Bread Mix #7A. You should try the Cloverleaf Dinner Rolls using the same mix, soft and delicious. Happy baking!
