Everyone has their favorite recipe for Potato Salad. It is a good-tasting staple during summer, great to take along on a picnic or eat anytime. Did you know that potato salad contains Resistant Starch? Cold potatoes contain a good source of Resistant Starch, and potato salad is a great way to indulge. I hope you will enjoy one of my favorite recipes for potato salad.

Dill Pickle Potato Salad

Delicious Potato Salad, make more and please a crowd!

Ingredients

  • 2 good-sized Potatoes boiled and peeled.

  • 1/8th teaspoon Pink Himalayan Sea Salt Ground

  • 1/4 teaspoon Black Pepper

  • 1/4 teaspoon Cayenne Pepper

  • 1 tablespoon Avocado Oil

  • 1 tablespoon Apple Cider Vinegar

  • 1 tablespoon prepared mustard

  • 3 tablespoons Boiling Water

  • 2 Celery Stalks chopped

  • 1 large cubed Dill Pickle

  • 1 Medium Boiled Egg mashed

  • 1/4 cup Real Mayonnaise (read the ingredients to be sure it is gluten-free)

  • Cilantro leaves and a dash of Paprika for Garnish

Method:

  • Place potatoes in a pot of cold water and bring to a boil. Simmer until soft. Drain and set aside to cool to the touch.
  • Peel and thinly slice potatoes, and place in a salad bowl for mixing.
  • Add salt, peppers, vinegar, mustard, and oil. Blend with the boiling water to create a creamy potato salad base. Set aside and prepare other ingredients.
  • Add chopped celery, dill pickle, egg, and mayonnaise, then blend until creamy but still a little chunky. Place in a serving dish and garnish with Cilantro or Parsley and a dash of Paprika.

Notes

  • For salt, it is worth trying out some Pink Himalayan Sea Salt with Trace Minerals for a healthier alternative.

Summertime is traditionally when we think of having our favorite potato salad. It is good anytime and adds a dimension of resistant starch to our diet. Try this Dill Pickle Potato Salad, and everyone will love it. If you prefer Bread and Butter Pickles, they are sweeter, and you can use those instead.

      Awesome, glad you like it. Sometimes I add Greek Yogurt to the dressing also, makes it creamy.

      So many potato salad recipes, this one seems to be hit with people. The hot water helps make it creamy and the flavor sink into the potatoes.
