I have enjoyed this whole book-writing process. The PUFF PASTRY RECIPE alone is amazing! There are step-by-step photographs of how to make it. The process only takes a few minutes a day for about 4 days, but then you have Puff Pastry available in your freezer to bake anytime. It tastes delicious and, once baked, can be re-warmed without going hard the next day! I love having Puff Pastry made ahead for special occasion meals. About the 3 Series of Trina’s Mixes.
There is a chapter of recipes for each mix.
- Mix #1 – Trina’s All Purpose Flour – 1A-1B-1C – Color Code Blue – Make Pancakes, Snack Cakes, Muffins, Roux Sauces, Cream Soups, and Cookies. Used alone or in conjunction with other mixes depending on the recipe.
- Mix #2 – Trina’s Pastry Flour – Mixes, 2A-2B-2C – Color Code Orange – Make Pies and Snack Cakes, Chocolate Cupcakes, Brownies, Scones, Biscuits, and Cookies. Used alone or in conjunction with other mixes depending on the recipe.
- Mix #3 – Trina’s Fine Flour – Mixes, 3A-3B-3C – Color Code Pink – Make light and fluffy cakes, Sponge Torte, Angel Food Cake, Crepes, Waffles, and Fresh Pasta and Crackers. Use it also as a thickener for fine sauces and gravies and as a dusting mix for bread.
- Mix #4 – Trina’s Aztec Harvest Blend – Color Code Green – a stand-alone blend -Rice, Tapioca, Corn, and Nightshade Free. A whole food blend that adds nutrition to every other mix by the spoonful. It also makes brown bread, hot-cooked porridge, and other recipes.
- Mix #5 – Trina’s Pizza and Bagel Mix – 5A-5B-5C – Make great Italian-style thick or thin crust Pizzas.
