Ingredients and How-To Instructions.
The Step-by-Step Recipe Method
- Cook Rice or Use 4 cups of leftover Jasmine Rice.
- How to Cook Rice: Measure 1 cup of Jasmine Scented Rice, and place it in a cooking pot. Add 2 1/2 cups of cold water. Bring to a boil, stir, cover, and then simmer on low heat for about 30 minutes or until the rice is done. 1 cup of rice makes about 6 cups of cooked rice.
- Add these ingredients to the rice and blend.
2 tablespoons of Coconut Palm Sugar (or regular sugar)
1 teaspoon of Cinnamon
3 cups of Milk
1 teaspoon pure Vanilla extract - Pour the Rice Mixture into a well-buttered casserole baking dish. Sprinkle with Cinnamon. Bake in a 350℉ pre-heated oven for a half hour to 40 minutes. The longer you bake it, the smoother it gets.
- ‘Dress-Up’ the Rice Pudding and Serve with Whipped Cream Topping and a Drizzle of Real Maple Syrup, Garnish with a single Blueberry.
- Whipped Cream Topping
Whip 1/4 cup Whipping Cream to which you have added,
1 teaspoon Pure Vanilla Extract
1 teaspoon Sugar
Notes
- I used a single frozen blueberry in the photograph to garnish since I had these on hand. You can use fresh blueberries or a cherry, whatever your heart desires. This Rice Pudding is only slightly sweet by itself. The Maple Syrup and Whipped Cream make it decadent. You can also eat it plain as a snack or make it ahead for a quick breakfast.
